Job Description

Job Description

The Director of Restaurants and Bars is a remotely-based position with a preference for candidates located in New England.

In this role, you will be the main point of contact and connection between the Restaurant and Bar outlets that Lark manages and the off-property supporting departments. Leveraging daily analysis, this role needs to ensure a granular focus on revenues, COGS, labor, and act swiftly to ensure weekly and monthly targets are achieved. As the department head of a relatively new department, you must be both a leader and a doer - see the big picture, but be willing to roll up your sleeves and build.

Hiring, developing, and providing feedback to the on-property Restaurant and Bar Managers, including the Front of House leadership and the Culinary leadership, is a critical aspect of this role, as is partnering with peers to ensure asset stability through onboarding, leadership change, and repositioning of assets.

The Director of Restaurants and Bars travels to his or her properties, meets with all levels of staff, supports guest interactions, and sets the example for the property of Lark’s core values.

Benefits include: Medical, Dental, Vision, 401(k), Hotel Discounts, Paid Time Off, Holiday Pay, Parental Leave

Compensation:

$130,000 yearly

Responsibilities:
  • Manage a team of Restaurant and Bar leadership roles on properties, ultimately being accountable for their performance in Guest Experience, Employee Experience, and overall profitability
  • Partner with Lark departments to develop communication strategies and procedures to support the growth and improvement of our operations
  • Uphold the brand vision for each outlet we manage and maintain consistency online and in person for our guests
  • Supporting the new opening of properties, transition through renovations, or strategic repositioning
  • Responsible for delivering Annual Plans, Budgets (capital and operating), and ongoing forecasts for each outlet we manage
  • Ensure the property teams are trained in and staffed for the events involving Food + Beverage, and that they are handled safely and profitably
  • Communicate weekly the performance of the outlets, highlighting the KPIs and any concerns in the month for the month
  • Be familiar with the goals of any programs created to reduce COGS, improve quality, and support operational efficiencies across the organization
  • Set and lead regular meetings with ownership to review monthly financial performance, annual plans, quarterly marketing, or forecast updates
  • Consistently keep an agenda 12-18 months ahead, broken down into appropriate components (monthly/quarterly) to ensure alignment with the articulated goals of Lark
  • Regularly visit and audit the condition (virtual and physical) of the outlets, and ensure compliance with Brand standards
  • Recruit, train, develop, provide feedback, and oversee the employee journey of on-property Food + Beverage Managers and property Food + Beverage leadership
  • Ensure teams are trained in all food safety procedures and proper service of alcohol
  • Act as an example for Lark’s culture of communication, inclusivity, and ventureship
  • Inspire new ideas, challenge the status quo, and look for ways to keep Lark innovating and standing out among hospitality companies
  • Ability to travel between 50-80% of the time
Qualifications:
  • Minimum of 8+ years of hospitality leadership experience within Food and Beverage, with a preference for multi-unit leadership
  • Ability to communicate multiple aspects of the asset viability, including profitability, market conditions, RevPAR performance relative to the market, and performance of Restaurant and Bar outlets
  • Opening experience for restaurants or bars is a plus
  • Self-motivated and have the ability to work and travel independently
  • Strong financial acumen specific to restaurant operations and profitability
  • People-facing role, with the ability to work through difficult conversations and conflict
